Quick Steak and Egg Breakfast Tacos

I love the charred, tender Flank steak and fluffy eggs in a flour or corn tortilla with these quick steak and egg breakfast tacos. The best part is that they are easy to make and will hold you over so that you can have a great day!

GOOD MORNINGS ARE IMPORTANT!

You don’t have to wait till Sunday brunch rolls around to treat yourself. Take a few minutes to marinade the steak overnight and make these tacos in the morning! Breakfast and brunch are my favorite times of the day. It seems like everything is calm and I can just sit back, relax and enjoy a nice cup of coffee with these quick steak & egg breakfast tacos. When you start your day full of flavor you are going to feel good about all of the tasks in front of you.

KEY INGREDIENTS FOR CAST IRON BREAKFAST TACOS

  • Flank Steak or Skirt Steak– You can make these tacos with either style of steak. It is your preference. The recipe is written for flank steak, but you can still use the same marinade and ingredients using skirt steak. If you choose to use skirt steak your cook time on the cast iron will be slightly shorter.
  • Eggs– Any eggs are great. It’s best to cook them from room temperature.
  • Flour or Corn Tortillas– It is your preference on which you like to use
  • For the marinade;
  • Vegetable oil or canola oil will do.
  • Red wine vinegar or white vinegar with a splash or red wine and lemon as a substitute.
  • Soy sauce or low sodium soy sauce.
  • Worcestershire sauce, any.
  • Crushed garlic add as much as you want.
  • Red Pepper Flakes, for heat.

STEPS TO BUILDING YOUR TACO

Marinade Instructions;

Place all ingredients of the marinade into a zip lock bag or bowl and mix together well. Submerge your steak into the marinade. Let your steak marinade in the refrigerator for 30 min-24 hrs.

Steps;

  1. Follow steps to marinade your steak. Marinate your steak in the refrigerator for 30 min.-24 hrs.
  2. Heat your cast iron skillet to high heat. 
  3. Remove your steak from the marinade and let some of the marinade drain off. Once your cast iron is hot add your steak. 
  4. Sear your steak on both sides and cook to your liking. 
  5. Remove the steak and let it rest for 10-15 minutes before slicing. 
  6. Whisk eggs and milk together in a bowl. 
  7. Heat a skillet to medium, add butter and olive oil. Once bubbling add eggs and scramble to your liking.
  8. Using a sharp knife, cut your steak very thin against the grain. Cutting against the grain is when you slice perpendicular to the internal muscle fibers of the meat.
  9. Heat your tortillas in the cast iron for 20 seconds each side.
  10. Build your taco. Start by adding eggs and top with steak. Finish with your favorite toppings like tomatoes, crema, queso fresco and jalapenos.
  11. Enjoy!

TIPS FOR SUCCESSFUL STEAK AND EGG TACOS

  • Use the marinade– I know that it is an extra step, but if you plan the flavor that you get from the marinade will be well worth it!
  • If you are cooking your steak indoors, make sure that you have proper ventilation. The steak will create smoke no matter what. It does not mean you are doing anything wrong.
  • You can use any style of egg you want in this dish. If you are cooking your egg sunny side up, place it on your taco last.
  • CUT AGAINST THE GRAIN– Cutting your steak against the grain is key to chewability. This is how you make a tough piece of meat easy to chew! Cutting against the grain is when you slice perpendicular to the internal muscle fibers of the meat.

CAST IRON SKILLET TIPS

Why should to use a cast iron skillet?

Over time becomes seasoned the more you use it. When you cook in your cast iron the flavors and “seasoning” from the skillet comes through to the food. Cast iron skillets also maintain even cooking temperatures and retain heat for longer periods of time over traditional skillets.

How to clean a cast iron skillet?

The best way to clean your skillet is with Kosher Salt and a plain water. The kosher salt will help remove any debris that are stuck on the skillet. Once you dry your skillet, use a paper towel with canola oil or any oil you prefer to wipe down the skillet. *Dry your skillet as soon as you are done washing it. Do not leave your skillet wet. If it is left wet it will guarantee it to rust.

Equipment

  • Cast iron skillet
  • Medium skillet

Ingredients
  

  • 8 a large eggs
  • 1 lb Flank steak
  • 3 tbsp. milk
  • 1 tbsp of butter
  • 1 tbsp. of olive oil
  • 6-8 corn or flour tortillas

Flank Steak Marinade

  • ½ c. vegetable oil
  • ¼ c. Red wine vinegar or white vinegar with a splash of red wine and lemon juice
  • ¼ c. Soy Sauce
  • 1 tbsp. Worcestershire Sauce

    Actually had this the other day….steak in the fridge and some left over tortillas (from a previous meal)…fresh eggs always. Quick fast and in a hurry.. exceptional meal!

    STeak for breakfast! As soon as my teenage son heard that he was out of bed and in the shower! So that was a win, before I had even started cooking!!!
    WE LOVED THESE!!!!
    I put the steak into marinade before I went to bed and it was perfect in the morning.
