This is one of the fastest ways to make a flavorful dish for the crew. This soup is healthy, light, and filling. It is Always fun to dress it up with your favorite toppings! I made homemade tortilla strips, added spice with jalapenos, and coolness with sour cream and avocado.

I would always find myself ordering chicken tortilla soup at restaurants and comparing them to find who’s the best. I believe that I have blended all of my favorite tastings to come up with this easy tortilla soup recipe.

ITEMS YOU NEED TO COMPLETE THE PROJECT

  • You’ll need a Crock pot, Instant Pot, or a Stock pot.
  • You can use a whole chicken or chicken breast. I like to remove the chicken after cooking and shred it with a fork.
Everything is seasoned perfectly.

QUICK STEPS FOR CHICKEN TORTILLA SOUP

  • Add everything to the instant pot or crock pot and stir well.
  • Cook soup for 1-3 hours depending on your cooking vessel.
  • Remove the cooked chicken from the pot and shred with 2 forks.
  • Heat the vegetable oil in skillet. When oil reaches 350 F. add strips and fry until crispy. Season with salt when they come out of the oil. Drain on a paper towel.
  • Serve soup with chicken added last

TIPS FOR THE BEST TORTILLA SOUP

You can use any type of chicken that you have. If you are using a whole chicken, make sure to remove any bones from the soup after cooking. Also, take care to SEASON more after your soup is finished. Make sure you TASTE your food before you serve it to anyone!

Ingredients
  

  • 2 chicken breast
  • 1,16 oz can roasted tomatoes
  • 2 cups chicken broth
  • 1 bag of frozen corn
  • 1 can of black beans
  • 2 white onions
  • 1 orange and red bell pepper
  • 1 Jalapeno for garnish
  • 1/2 c. Sour Cream for garnish
  • 1 Ripe Avocado sliced for Garnish
  • 2 tbsp. Cumin
  • 2 tbsp. Paprika
  • 2 tsp.Chili powder
  • 2 tbsp.Onion powder
  • 2 tbsp Garlic powder
  • 2 tbsp Salt
  • 2 tbsp. Pepper.
  • 2 tsp. Corn Starch

Tortilla Strips

  • 6 Corn tortillas cut into strips
  • 1/2 c. Vegetable oil

  • Add everything to the instant pot or crock pot and stir well.
