TENDER SALMON AND FRESH SALSA

You are going to love this recipe. The salmon is light and cooked to perfection. The mango salsa has a great flavor and crunch with fresh ingredients. You will also love how simple this recipe is to make.

  • Ripe Mangos– Using Ripe mangos is essential for success in this salsa. A good way to increase time of ripening, place your mangos into a brown paper bag.
  • Fresh Salmon- Fresh salmon will give the cleanest flavor.
  • Warm tortillas– Corn or Flour tortillas should always be warmed before you make your taco.
  • Add Tajin– Try adding a few sprinkles of Tajin, to give a added pop of flavor.

Let the Flavors combine for 30 min-3 hrs.
  • Make your Mango Salsa first! Try to plan ahead so that it can provide to maximum amount of flavor.
  • Let your salmon get to room temperature before cooking.

STEPS TO SUCCESS

  1. Start by making your mango salsa first. Combine all ingredients for mango salsa in a bowl. Mix well, set aside and chill for 30 min- 2 hrs.
  2. Next you’re going to pan sear your salmon fillets. Season both sides of the salmon evenly with your salt, pepper and garlic powder.
  3. Heat your skillet to medium heat and add butter and olive oil.
  4. Once your butter and olive oil have melted down and bubbling add your salmon. You will know your salmon is ready to turn once it does not stick to the skillet.
  5. Flip your salmon once it’s golden brown. Once your salmon is golden on each side, remove from your skillet. Pull-A-Part or flake with your fork for your tacos.
  6. Warm your tortillas in a dry skillet, about 10 seconds on each side. Add some flaked salmon and top with your Mango Salsa.
  7. Enjoy! This is a light and fresh dish!
Adding crema’ also increases the flavor!

TIPS AND ADJUSTMENTS

  • Plan ahead and prepare your salsa in advance. The longer it sits and the juices combine, the better the flavor! 
  • You can change the protein on this dish. Shrimp is a good option, chicken or any other protein!

Ingredients
  

Salmon

  • 2 salmon fillets skinless and deboned
  • 1 tsp. Kosher salt
  • 1 tsp. Pepper
  • 1 tsp. Garlic powder
  • 2 tbsp. Olive oil
  • 1 tsp. Butter

Mango Salsa

  • 1-2 diced jalapenos
  • ½ diced red onion
  • 1 medium cucumber chopped
  • ½ red bell pepper chopped
  • 2 lime juice juiced
  • 2 tbsp. Fresh cilantro chopped
  • 1-2 tsp. Kosher salt
  • Dash of Tajin optional

Tacos

  • 4-6
  • Corn or flour tortillas

Instructions
