Vegetable and Sausage bow tie pasta is a perfect  30 minute meal. Using Sweet Italian sausage, and fresh vegetables, this colorful dish will have you so excited for dinner. My husband loves when I make this dish because he knows that there are going to be some great leftovers for lunch.

A PERFECT WAY TO GET THOSE VEGETABLES IN!

All of those vegetables that you have to use “today” are going in this dish! This is the perfect way to incorporate anything you have in your refrigerator. I love the sweet sausage in this dish, paired with the heat from the cayenne pepper. The best part about it is that, you can go all vegetables on this dish if you want to! Vegetable bow tie pasta is the perfect choice for any dinner.

KEY INGREDIENTS FOR VEGETABLE BOW TIE PASTA

  • Colorful Vegetables- Remember, we are visual eaters first. When food is colorful, it tells our brain that it is more appetizing. In turn, we enjoy our food more! Some veggies that go well in this dish are; bell peppers (any color), onions, tomatoes, basil, spinach, zucchini, squash, mushrooms and more.
  • Cayenne pepper- Even if you use a little bit of the recommended amount, the heat from the cayenne gives this dish life.
  • Sweet Italian Sausage The combination of sweet and heat is great!

QUICK STEPS FOR PERFECT VEGETABLE & SASUAGE PASTA

  1. In a large stock pot add 5 Q. of water and two tablespoons of salt. Once the water is at a rolling boil add in bow tie pasta.
  2. Heat your cast iron skillet to medium-high heat. Add two tablespoons of olive oil and sweet Italian sausage. Use a wooden spoon to break apart and brown your sausage.
  3. Once your sausage is cooked, remove it from the skillet. Keep remaining juices in the skillet.
  4. To your skillet add red bell peppers, yellow bell peppers, sweet onions, Portobello mushrooms, and seasonings.
  5. Cook your vegetables until they have softened. 
  6. Add the sausage back to the skillet along with cooked bowtie pasta (you might not use all of the pasta).
  7. Add your remaining 2 tablespoons of olive oil, spinach, tomatoes and parmesan. Cook for another 5 minutes..
  8. Serve hot and enjoy!

TIPS FOR SUCCESS!

  • Cook your sausage first. This will allow the vegetables to get more flavor from the oil remains of the meat.
  • Using a cast iron skillet will allow for retention of heat and more flavor.
  • Add the spinach near the end of cooking. Spinach cooks quickly, so you do not want to over cook it an lose it’s vitamins!

This dish can be pre-prepped a head of time and frozen for meal prep. Place cooked and cooled ingredients into an airtight Ziploc bag. Make sure to remove as much air as possible for maximum freshness. This dish can be held in the freezer for 3-5 months.

WHAT OTHER PASTA CAN I USE

Other types of pasta that go well with this dish; penne pasta, rigatoni, fusilli or even macaroni noodle. Anything that has a good bite.

WHAT OTHER PROTEIN CAN YOU USE?

  • Kielbasa Sausage; cut into 1/4 inch thick coins and sear just like you would the sausage
  • Shrimp; they cook quickly, so they would be a perfect addition to this dish. Make sure not to over cook them.

  • 1 lb. Sweet Italian Sausage
  • 1 lb. Bowtie pasta
  • ½ Red Bell Pepper chopped
  • ½ Yellow Bell Pepper chopped
  • 1 Sweet Onion
  • 8 Cherry Tomatoes quartered mixed variety
  • 1 c. Baby spinach
  • 8-10 Baby Portobello mushrooms chopped
  • 4 tbsp. Olive oil divided
  • 2 tbsp. Italian seasonings
  • 1 tbsp. Garlic powder
  • 1/2 tbsp. Red pepper flakes
  • 1/2 tbsp. Kosher salt
  • ½ c. Shredded Parmesan Cheese
