Easy Microwave Lemon Curd (4 ingredients)

Lemon curd can be a beautiful addition to cupcakes, pies, cookies and other sweet treats. I will show you how to make an easy microwave lemon curd with 4 ingredients that takes 6 minutes. It is stress-free and hassle-free!

I am all about shortcuts! If I can learn a new way to do something and it takes me less time and little to no clean up, sign me up! The traditional way to make lemon curd is using a double boiler and slowly bringing the ingredients up to temperature, so that you do not curdle your eggs and continually stirring for 15 minutes. I mean who has time for that??! This recipe will cut all that out and shorten your cook time and reduce clean up. Busy parents will approve!

What do I use lemon curd for?

Topping; Pancakes, waffles, toast or Ice cream all get elevated with lemon curd added to the top.

Parfaits; Layer curd in between fruit and yogurt.

Fillings; Cupcakes, tarts, crapes, cake layers, macaroons, cookie fillings and sandwich cookies

Inside Lemon Curd

This lemon curd has 4 simple ingredients

  • Eggs; The whole egg are used for the microwave hack to work.
  • Sugar; granulated white sugar
  • Unsalted Butter; this is very important. You can use any brand you would like.
  • Lemon juice; Fresh is best, for the best flavor.

How to make microwave lemon curd

  1. In a medium sized bowl, add eggs, sugar and lemon juice.
  2. Whisk this well till the sugar has dissolved.
  3. Slowly add in your melted butter and whisk for another 30 seconds.
  4. Place a plate underneath your bowl in the microwave and microwave for 1 minute.
  5. After 1 minute remove the bowl. Whisk ingredients for 30 seconds and then place back in the microwave for 1 minute.
  6. You will repeat this process four times and at the end you will have a gel curd that is sweet and tart. Use a spoon to check the thickness of the custard.
  7. Pour your curd into a jar and place in the refrigerator to cool and set for 1-3 hrs. before use.

Pro Tips

  • Be careful because the custard is extremely hot each time you remove it from the microwave.
  • Make sure you vigorously whisk in between each minute increment.
  • Taste your custard and make sure that it’s the texture and consistency that you want.
  • If you want it to be thicker try adding 1 extra egg yoke.
  • You have the option of adding lemon zest to this recipe.

Storage

Store your lemon curd in an airtight container refrigerated for up to 4 weeks. I would not suggest freezing unless it is flash frozen at a high temperature.

FAQ

How do I know my lemon curd it thick enough?

You will notice your whisk will leave tracks in the curd mixture. You can also do the soon test to test the thickness. Dip the spoon and look to see if you can leave a finger mark on the back of the spoon.

How to avoid my lemon curd tasting eggy?

To avoid an eggy flavor mix your lemon curd in a glass or stainless steel mixing bowl.

    Great recipe! I love lemon curd, but haven’t made it bc I don’t have time to stand around a stove to make it. This microwave version was so easy!
