LETS MAKE YOUR POTATOES POP!

The potato is one of the most versatile vegetables out there. They can be mashed, roast, scalloped, fried, turned into a dumplings (gnocchi) and more! I am here for it ALL! In this recipe we are going to be roasting the potatoes in the oven and then smashing them and adding garlic, butter and parsley to create some delicious smashed potatoes. I love this recipe because it is easy, fun and has tons of flavor that I love and I hope you will enjoy. Bring your potatoes to life with this fun dish. 

BEST WAYS TO COOK A POTATO

  • Roasting- Cooking using dry heat in the oven
  • Scalloped- Slice potatoes very thin and cook in cream sauce.
  • Fried- Sliced into preferred shapes and fried in hot oil. Example; French fries or waffle fries.
  • Dumplings- Create potato dumplings like Gnocchi.
  • Mashed- Potatoes that have been boiled, mashed and whipped. Adding flavor with milk and butter.
Garlic and butter are great toppings!

SIMPLE INGREDIENTS YOU WILL NEED

  • Small white potatoes; these cook the quickest and are a easy size to eat.
  • Olive oil; extra virgin is good.
  • Butter; salted or unsalted.
  • Garlic cloves; try to crush them or chop them fine. The more garlic the better I say!
  • Parsley; fresh or dried will work. Fresh is best if you have it.
  • Parmesan; grated or shredded.

STEPS FOR DELICIOUS SMASHED POTATOES

  1. Heat oven to 375° f
  2. Rinse your potatoes in cool water, and pat dry
  3. Evenly space your potatoes on your sheet pan.
  4. Drizzle olive oil over the tops of the potatoes. Using your hand, roll the potatoes in the olive oil.
  5. Sprinkle kosher salt over the tops of the potatoes.
  6. Place your potatoes in the oven uncovered for 30min. Or until you hear them sizzling.
  7. Once your potatoes are sizzling and golden brown, remove them from the oven.
  8. Using a mason jar or the bottom of a flat glass cup, press down with medium pressure on the potato. Try not to press too hard so that your potatoes stay somewhat intact. You still want to be able to pick the potato up in one piece.
  9. In a small glass bowl. Melt butter, with garlic and parsley. Stir together with the spoon.
  10. Drizzle your garlic butter over the tops of each smashed potato. Top with grated Parmesan.
After rinsing and drying, drizzle olive oil on potatoes.
Use your hand to roll potatoes in oil, so they get evenly coated.
Season with kosher salt and pepper before roasting. Roast 375f for 30min or until sizzling
Use a mason jar or glass cup.
Use medium to light pressure to smash.
After smashing they should look like this.
Melt butter with garlic and parsley.
Drizzle butter mixture on each potato.
Sprinkle with parmesan and bake for another 5-7 minutes.
Add more salt or pepper.

TIPS FOR SUCCESS

  • When smashing your potatoes try not to press too hard. It’s best to go light and then increase the pressure.
  • Try to make sure the potato size is relatively the same. This way all of the potatoes will cook within the same time frame.
  • Don’t skimp on the butter. Adding plenty of butter will make these little smashed potatoes delicious bites!

Ingredients
  

  • 12 Small white potatoes
  • 2 tbsp. Olive oil extra virgin
  • 2 tbsp. Butter salted or unslated
  • 6 cloves garlic chopped

  • ¼ c. Grated Parmesan
