These 6 ingredient garlic smashed potatoes are fun to make and even better to eat! With 6 simple ingredients you can have a gourmet looking side dish in no time. They have plenty of garlic, fresh parsley and of course, BUTTER. Everything combined makes these garlic smashed potatoes the best!

Ingredients
  

  • 12 Small white potatoes
  • 2 tbsp. Olive oil extra virgin
  • 2 tbsp. Butter salted or unslated
  • 6 cloves garlic chopped
  • 2 tbsp. Fresh chopped parsley
  • ¼ c. Grated Parmesan
  • Kosher Salt and pepper for seasoning

Instructions
 

  • Heat oven to 375° f
  • Rinse your potatoes in cool water, and pat dry
  • Evenly space your potatoes on your sheet pan.
  • Drizzle olive oil over the tops of the potatoes. Using your hand, roll the potatoes in the olive oil.
  • Sprinkle kosher salt over the tops of the potatoes.
  • Place your potatoes in the oven uncovered for 30min. Or until you hear them sizzling.
  • Once your potatoes are sizzling and golden brown, remove them from the oven.
  • Using a mason jar or the bottom of a flat glass cup, press down with medium pressure on the potato. Try not to press too hard so that your potatoes stay somewhat intact. You still want to be able to pick the potato up in one piece.
  • In a small glass bowl. Melt butter, with garlic and parsley. Stir together with the spoon.
  • Drizzle your garlic butter over the tops of each smashed potato. Top with grated Parmesan.
  • Place your potatoes back in the oven for 5 to 7 minutes for the final cook.
  • Your potato should come out delicious!

Notes

When smashing your potatoes try not to press too hard. It's best to go light and then increase the pressure.
Try to make sure the potato size is relatively the same. This way all of the potatoes will cook within the same time frame.
Don't skimp on the butter. Adding plenty of butter will make these little smashed potatoes delicious bites!
Add more Parmesan and Salt and pepper to finish.
