As I got older I would try to jazz up my tomato soup by adding milk or sour cream or anything that would give it an extra boost of flavor and creaminess. This recipe will help you take it to the next level with a few extra ingredients.
KEY INGREDIENTS FOR SUCCESS
- Boursin Cheese Block ‘Garlic and Fine Herbs’- This is where you get that extra creamy flavor from. It also will give the soup extra seasoning of garlic and herbs.
- Ripe Roma Tomatoes- I find that Roma’s are the best in this dish. They are sweet and they carry fewer seeds.

STEPS TO EASY ROASTED TOMATO SOUP
- Set your oven to 375 F.
- In this order add your ingredients into the Dutch Oven (or oven safe stock pot). Tomatoes, onions, carrots, Boursin cheese, and garlic. Drizzle your olive oil over the top of the garlic and the rest of the vegetables. Season with salt and pepper.
- Cover and roast this in the oven for 30 minutes, until the vegetables soften.
- Remove from the oven, and add chicken broth.
- Simmer on medium heat for 15 minutes.
- Use your immersion blender or food processor to blend all ingredients until smooth. * Slowly blend when adding hot items to the food processor.
- Taste and season once everything is blended. Keep warm on the stove until you are ready to serve.
