Easy Roasted Tomato Soup Recipe

This is the easiest and most flavorful way to create homemade tomato soup! This is a perfect way to get vegetables into your diet with all those essential vitamins. With fresh ingredients and a shortcut hack you will be making this all the time to go with any grilled cheese or flatbread dipper.

SIMPLE STEPS TO THE PERFECT SOUP!

I grew up in Colorado in cold weather. So having a delicious tomato soup with grilled cheese was a staple for me. I was use to the traditional canned tomato soup where you add a little bit of water and call it good. As I got older I would try to jazz up my tomato soup by adding milk or sour cream or anything that would give it an extra boost of flavor and creaminess. This recipe will help you take it to the next level with a few extra ingredients.

KEY INGREDIENTS FOR SUCCESS

  • Boursin Cheese Block ‘Garlic and Fine Herbs’- This is where you get that extra creamy flavor from. It also will give the soup extra seasoning of garlic and herbs.
  • Ripe Roma Tomatoes- I find that Roma’s are the best in this dish. They are sweet and they carry fewer seeds.
BASIC INGREDIENTS THAT PACK THE MOST FLAVOR!

STEPS TO EASY ROASTED TOMATO SOUP

  1. Set your oven to 375 F. 
  2. In this order add your ingredients into the Dutch Oven (or oven safe stock pot). Tomatoes, onions, carrots, Boursin cheese, and garlic. Drizzle your olive oil over the top of the garlic and the rest of the vegetables. Season with salt and pepper.
  3. Cover and roast this in the oven for 30 minutes, until the vegetables soften. 
  4. Remove from the oven, and add chicken broth. 
  5. Simmer on medium heat  for 15 minutes. 
  6. Use your immersion blender or food processor to blend all ingredients until smooth. * Slowly blend when adding hot items to the food processor. 
  7. Taste and season once everything is blended. Keep warm on the stove until you are ready to serve.

STEP BY STEP

1. Layer your vegetables.
2. Add oil and roast in the oven.
3. Add broth and seasoning on the stove.
4. Gently mix together.
5. Use immersion blender or food processor.
6. Enjoy!

  • Large Stock Pot or Dutch Oven.

  • Immersion Blender

Ingredients
  

  • 6 Ripe Roma Tomatoes
  • 3 Heads of Garlic
  • 2 Carrots peeled and diced
  • 2 White onions diced
  • 1 Boursin Cheese Block Garlic & Fine Herbs
  • 2 c. Chicken Broth
  • 1 tsp. Black Pepper
  • 1 tsp. Kosher Salt
  • 2 Tbsp. Olive oil

Instructions
 

  • Set your oven to 375 F.

Notes

I love to add mozzarella and pepperoni flatbread dippers to this dish. It is the perfect dipper for this soup! A fried grilled cheese may also do the trick!
