Asparagus and Chicken Roll-up

Ingredients
  

  • 2 Chicken breast halved
  • ½ c. Italian bread crumbs and salt
  • 4 slices Provolone cheese
  • 1 bundle Asparagus
  • 10-12 Basil leaves
  • 1 Egg whisked
  • 2 tsp. Kosher salt
  • 1 tbsp. Italian seasonings
  • 1 tsp. Onion powder
  • 1 tsp. Paprika
  • 1 tsp. Black pepper
  • 1 tbsp. Butter
  • 2 tbsp. Olive oil
  • 8 oz Balsamic glaze

Instructions
 

  • Begin by heating your oven to 375° f
  • Start by slicing your chicken breast in half. Using a mallet on the flat side and plastic wrap covering the chicken. Pound the chicken thin to about a ½ in.
  • Evenly dispersed seasonings on the chicken on both sides.
  • Layer basil, asparagus and then cheese.
  • Wrap your chicken bundle and use butcher string to tie it or toothpicks to hold it together.
  • Dip your chicken bundle into your whipped egg. Make sure that it is fully coated with the egg wash.
  • Roll your chicken bundle in Italian bread crumbs.
  • Heat your butter and olive oil in a skillet on medium heat.
  • Add your chicken bundles to the skillet and cook each side until golden brown.
  • Place a piece of parchment paper on your baking sheet so that the chicken does not stick. Put chicken bundles on your baking sheet.
  • Drizzle the bundles with balsamic glaze.
  • Cook in the oven for 15 to 20 minutes. Check periodically to see if they are done. Chicken finishes cooking when the internal temperature reaches 165° f.
  • Remove from the oven and enjoy!

Notes

If you are pounding your chicken. Make sure you get it as thin as possible. This will help speed up the cooking process.
DON'T FORGET TO REMOVE THE BUTCHER STRING OR TOOTHPICKS AT THE END OF COOKING.
The chicken will brown quickly in the skillet, so make sure you are watching it.
