Vegetable and Sausage Bow Tie Pasta

This is a perfect 30 minute meal idea. Using sweet Italian sausage, and fresh vegetables, this colorful dish will have you so excited for dinner.

Equipment

  • Cast Iron Skillet or any Skillet
  • Stove top

Ingredients
  

  • 1 lb. Sweet Italian Sausage
  • 1 lb. Bowtie pasta
  • ½ Red Bell Pepper chopped
  • ½ Yellow Bell Pepper chopped
  • 1 Sweet Onion
  • 8 Cherry Tomatoes quartered mixed variety
  • 1 c. Baby spinach
  • 8-10 Baby Portobello mushrooms chopped
  • 4 tbsp. Olive oil divided
  • 2 tbsp. Italian seasonings
  • 1 tbsp. Garlic powder
  • 1/2 tbsp. Red pepper flakes
  • 1/2 tbsp. Kosher salt
  • ½ c. Shredded Parmesan Cheese

Instructions
 

  • In a large stock pot add 5 Q. water and two tablespoons of salt. Once the water is at a rolling boil add in bow tie pasta.
  • Heat your cast iron skillet to medium-high heat. Add two tablespoons of olive oil and sweet Italian sausage. Use a wooden spoon to break apart and brown your sausage.
  • Once your sausage is cooked, remove it from the skillet. Keep remaining juices in the skillet.
  • To your skillet add red bell peppers, yellow bell peppers, sweet onions, Portobello mushrooms, and seasonings.
  • Cook your vegetables until they have softened.
  • Add the sausage back to the skillet along with cooked bowtie pasta (you might not use all of the pasta).
  • Add your remaining 2 tablespoons of olive oil, spinach, tomatoes and parmesan. Cook for another 5 minutes..
  • Serve hot and enjoy!
