Loaded Air Fryer Roasted Potatoes (Bacon)

These loaded air fryer roasted potatoes with bacon are the perfect new addition to jazz up your weeknight side dish or add to any holiday menu. They are full of flavor with ranch, dill, and bacon! They take little to now preparation and they come out great!

Ingredients
  

  • 1 lb. Baby Yukon Gold potatoes.
  • 2 tbsp. Extra virgin olive oil
  • 1 Ranch packet
  • 2 tsp. Dill weed
  • 2 tsp. Paprika
  • 2 tsp. Kosher salt
  • 1 tsp. Cracked black pepper
  • 1 c. Shredded mozzarella and provolone
  • 4 slices of cooked bacon crumbled.
  • Sour Cream for garnish
  • Chopped parsley for garnish
  • Chopped chives for garnish

Instructions
 

  • Preheat the air fryer to 400° F.
  • Rinse and drain potatoes in a colander. Pat them dry.
  • Quarter potatoes cut to 1/2 in width.
  • Add potatoes to a bowl and drizzle with olive oil. Season with 1/2 of the ranch seasoning packet, Dill, paprika, Thissalt and pepper.
  • Use a spoon to mix well and make sure every potato is coated in the seasoning and olive oil.
  • Place the potatoes in the air fryer basket and cook for 20 to 25 minutes or until fork tender.
  • Remove them from the air fryer and spread cheese and bacon bits on top.
  • Place back in the air fryer so that the cheese will melt completely.
  • Garnish with fresh chives or parsley and dollops of sour cream. Enjoy!

Notes

Make sure to pat the potatoes dry so that they will crisp up well in the air fryer or oven.
Liberally coat with olive oil and seasonings. Potatoes can take on quite a bit of seasoning, so load up the species.
To get a brown top place your dish under the broil setting in the oven.
