Easy Roasted Tomato Soup

This is the easiest and most flavorful way to create homemade tomato soup! This is a perfect way to get vegetables into your diet with all those essential vitamins. With fresh ingredients and a shortcut hack you will be making this all the time to go with any grilled cheese or flatbread dipper.

Equipment

  • Large Stock Pot or Dutch Oven.
  • Oven
  • Immersion Blender

Ingredients
  

  • 6 Ripe Roma Tomatoes
  • 3 Heads of Garlic
  • 2 Carrots peeled and diced
  • 2 White onions diced
  • 1 Boursin Cheese Block Garlic & Fine Herbs
  • 2 c. Chicken Broth
  • 1 tsp. Black Pepper
  • 1 tsp. Kosher Salt
  • 2 Tbsp. Olive oil

Instructions
 

  • Set your oven to 375 F.
  • In this order add your ingredients into the Dutch oven. Tomatoes, onions, carrots, Boursin cheese, and garlic. Drizzle your olive oil over the top of the garlic and the rest of the vegetables. Season with salt and pepper.
  • Cover and roast this in the oven for 30 minutes, until the vegetables soften.
  • Remove from the oven, and add chicken broth.
  • Simmer on medium heat for 15 minutes.
  • Use your immersion blender or food processor to blend all ingredients until smooth. * Slowly blend when adding hot items to the food processor.
  • Taste and season once everything is blended. Keep warm on the stove until you are ready to serve.

Notes

I love to add mozzarella and pepperoni flatbread dippers to this dish. It is the perfect dipper for this soup! A fried grilled cheese may also do the trick!
