These Loaded air fryer roasted potatoes with bacon are the perfect new addition to jazz up your weeknight side dish or add to any holiday menu. They are full of flavor with ranch, dill, and bacon! They take little to now preparation and they come out great!

What makes them ranch potatoes?

Ranch Packet; This packet has seasonings of dill, garlic powder, onion powder, parsley, salt, pepper and buttermilk powder. Of course you could add all of these ingredients individually, but it’s nice to have the ranch packet because it’s already mixed for you. I love you using it because it gives it a great zest and overall rounded flavor.

Bacon makes everything better!

This is a true statement! Bacon bits give this dish the extra pop of salt and crunch at the end. It also helps mimic a loaded baked potato by adding sour cream, parsley or chives and bacon. Bacon bits are some of the best add-ons!

Potato options

There are many different varieties of potatoes that you an use for roasting. The most common used are, Yukon gold, red potatoes, white potatoes and new potatoes. All of these varieties are good options for this recipe because of their thin skin and buttery taste. You can use the traditional russet potato, but you will need to make sure to peel them before use.

How to prepare loaded air fryer roasted potatoes

  1. Preheat the air fryer to 400° F.
  2. Rinse and drain potatoes in a colander. Pat them dry.
  3. Quarter potatoes cut to 1/2 in width.
  4. Add potatoes to a bowl and drizzle with olive oil. Season with 1/2 of the ranch seasoning packet, dill weed, paprika, salt and pepper. 
  5. Use a spoon to mix well and make sure every potato is coated in the seasoning and olive oil.
  6. Place the potatoes in the air fryer basket and cook for 20 to 25 minutes or until fork tender.
  7. Remove them from the air fryer and spread cheese and bacon bits on top.
  8. Place back in the air fryer so that the cheese will melt completely.
  9. Garnish with fresh chives or parsley and dollops of sour cream. Enjoy!

Pro Tips

  • Make sure to pat the potatoes dry so that they will crisp up well in the air fryer or oven. 
  • Liberally coat with olive oil and seasonings.  Potatoes can take on quite a bit of seasoning, so load up the species. 
  • To get a brown top place your dish under the broil setting in the oven. 

Prepare potatoes ahead of time

You can certainly prepare these potatoes ahead of time. Just know if you pre chop the potatoes that the color of the potato may change slightly after you cut it once it hits the air. To avoid discoloration after chopping, place the potatoes into a bowl of cold water. And refrigerate until you’re ready to season.

Storing, Reheating and Freezing Ranch Potatoes

Store

Place any leftover potatoes in an airtight container in the refrigerator. They should last up to 5 days.

Reheating

Reheating potatoes can be tricky. Best practice is to reheat in the oven. Place a little bit of water in the bottom of the dish so that they will steam when reheating. You may also need to read crisp the top of the cheese.

Freezing 

Freeze ranch potatoes in a Ziploc bag or a foil tin that is sealed. They can last for 3 to 5 months frozen.

Ways to prepare roasted potatoes

Air Fry Roasted Potatoes

Using the air fryer will cut your cook time in half. Instead of the traditional oven taking 40 to 45 minutes, your cook time in the air fryer will be around 20 minutes. It will also allow the potatoes to crisp really well.

Oven Roasted Potatoes

Set your oven to 375° and roast these potatoes for 40 to 45 minutes until fork tender. Finish with your choice of cheese, blend and bacon.

Ingredients
  

  • 1 lb. Baby Yukon Gold potatoes.
  • 2 tbsp. Extra virgin olive oil
  • 1 Ranch packet
  • 2 tsp. Dill weed
  • 2 tsp. Paprika
  • 2 tsp. Kosher salt
  • 1 tsp. Cracked black pepper
  • 1 c. Shredded mozzarella and provolone
  • 4 slices of cooked bacon crumbled.
  • Sour Cream for garnish
  • Chopped parsley for garnish
  • Chopped chives for garnish

Instructions
 

  • Preheat the air fryer to 400° F.
