These Asparagus and Chicken Roll-up are exploding with flavor. I am so happy with how this dish turned out and I am excited to shar with you the secrets to making this delicious and easy dish. Best part is that it’s really easy to create.

It’s best when all the flavor is in one bite!

WHAT’S NOT TO LOVE?

It is easy to love making this dish. All the flavor and everything you need is in one bite. It has a crunchy crust, tender asparagus, melty cheese and sweet notes from the basil and balsamic glaze. I was mad that I didn’t make more so that I could have leftovers for lunch.

INSIDE ASPARAGUS AND CHICKEN ROLL-UPS

  • CHICKEN BREAST; They sell thin breast or you can halve a full breast and pound it out.
  • ASPARAGUS; Fresh is best. Make sure to trim the hard ends.
  • BASIL; A mixture of basil is always fun. I used fresh sweet basil for this recipe.
  • PROVOLONE; It is mild, sharp and melts well.
  • BALSAMIC GLAZE; You can buy this at the store or make your own.

HOW TO MAKE

  1. Begin by heating your oven to 375° f
  2. Start by slicing your chicken breast in half. Using a mallet on the flat side and plastic wrap covering the chicken. Pound the chicken thin to about a ½ in.
  3. Evenly dispersed seasonings on the chicken on both sides.
  4. Layer basil, asparagus and then cheese.
  5. Wrap your chicken bundle and use butcher string to tie it or toothpicks to hold it together.
  6. Fully coat your chicken bundle into your whipped egg wash.
  7. Roll your chicken bundle in Italian bread crumbs.
  8. Heat your butter and olive oil in a skillet on medium heat.
  9. Add your chicken bundles to the skillet and cook each side until golden brown.
  10. Place a piece of parchment paper on your baking sheet so that the chicken does not stick. Put chicken bundles on your baking sheet.
  11. Drizzle the bundles with balsamic glaze.
  12. Cook in the oven for 15 to 20 minutes. Chicken finishes cooking when the internal temperature reaches 165° f.
  13. Remove from the oven and enjoy!

3. Add Basil leaves.
4. Place 4-5 asparagus stalks in the middle.
5. Place provolone cheese on top.
6. Wrap your chicken bundles with butcher string or toothpicks.
7. Dip your bundles in egg wash.
8. Roll bundles in bread crumbs.
9. Brown your bundles in butter and olive oil.
10. Drizzle glaze on bundles.
11. Bake for 15-20 minutes.
12. Enjoy!

TIPS FOR SUCCESS

  • If you are pounding your chicken. Make sure you get it as thin as possible. This will help speed up the cooking process.
  • DON’T FORGET TO REMOVE THE BUTCHER STRING OR TOOTHPICKS AT THE END OF COOKING.
  • The chicken will brown quickly in the skillet, so make sure you are watching it.
